Happy Easter! I hope your day was filled with food and chocolate as mine was. Only one egg this year but then that beats last years grand total of zero. On the plus side however, Easter lunch was a feast to remember somewhat akin to Christmas - although on a slightly smaller scale.
My mum had bought a beautiful joint of lamb to roast along with plenty of vegetables and gravy (actually some of the best gravy she has ever made!). I was in charge of the pudding department - something that should be avoided at all costs if you are on a diet. We ended up with three choices for dessert. Chocolate fondants left over from last night (although this time they were not so overcooked and so did have a liquid centre). A specially created double baked raspberry meringue / pavlova. It was double baked because when it was first cooked two days ago, it was still ever so slightly raw inside still and so we shoved it back in the oven for good measure. So far as I know, no one died but I wouldn't recommend doing this unless absolutely necessary and I accept no responsibility for the outcome. I made a raspberry coulis to go with it and it was very very nice so I was happy.
The afternoons entertainment was provided by the Wii. After sitting back and letting the others take part in the Wii sports tournaments, I was strongly cooerced into taking part in the Wii dance game providing much hilarity and several videos all of which are currently being uploaded to YouTube. Not sure if they will make it out into the public viewing space yet but we shall see.
