Lemon Fudge Cakes and #tomsontoast


Searching through some recipe books earlier today in search of a pudding for Easter Sunday (yes I know it's not for another week yet but we were making a shopping list) led me to look back over the recipes from the Hairy Bikers Mum's Know Best show. I came across Aida's recipe from the first show (if I remember correctly) for lemon fudge biscuits. So they have been made and are currently cooling in the fridge. They supposedly only needed a couple of hours but they still seemed a bit squishy when I iced them earlier so I have left them overnight in the hope that they will harden up a bit. Also, if they are any good (as I suspect they might be) then I will post up the recipe.

With a bit of luck I will remember to post a picture of them tomorrow although I shall have to borrow my old camera back from my mum. I've left the charger for mine in Sheffield and am hoping to use it on Friday for my friends 21st and don't want to find the battery is dead. That's the downside to using a camera with a Li-ion battery but I find they last longer than using AAs but with the obvious downside that you need a special charger and can't buy the batteries easily and cheaply in the shops.

My grand achievement for today has been that I reached my 5 fruit and vegetables a day count. This happens so rarely in my life that I consider it to be an achievement. The greatest contribution to the count came from lunch oddly enough and at the suggestion of Mr Phil Jupitus (yes, him off've NMTB). He has been running a hashtag #tomsontoast referring to his choice of lunch for the next few months whilst he works his way through the huge variety of tinned plum tomatoes available. Inspired by this, I decided to try it myself and despite using Sainsbury's basics range of peeled plum tomatoes, they were actually rather nice. Not a huge amount of flavour and one of them was a little under-ripe and subsequently a bit on the hard side. The juice was a lot thicker than I had imagined it would be - assuming a thin juice from the basics range but not so it would seem. I cheated a little and grated some cheese on the top but then I'm not comparing anything so it's okay. A large tin of tomatoes is probably two portions of your 5-a-day and it tastes pretty good too.
