At last! I have made a new recipe without it being an absolute disaster. Far from it in fact, the lemon and ginger cupcakes I made were fantastic. Deliciously soft, moist and zingy they certainly won't last very long and the recipe only made six - despite saying it made twelve.
I wish the same success could have been applied to the dinner which was an unmitigated disaster. We have had the coconut and lime left over from last weeks appalling muffins and had been meaning to use them up in a Thai curry and tonight, that finally came. Sadly as there was only half the usual amount of coconut milk in their, the result was a very salty, rather unpleasant tasting meal. The only constellation as far as I could see was that it had exactly the right amount of chillies in for my liking, its just a shame about the rest of it. If I had done what I usually do and tasted it as I was cooking, I could perhaps have averted this with some normal cow's milk but there was a large quantity of raw chicken in it for the most part and I'd rather not have salmonella!
